I started experimenting with pumpkin recipes early this season! This is my third year living in the U.S after 10 years overseas. For me one of the highlights of living in my home country is the holiday season. I can have access to all those holiday benefits that were not available to me living overseas. One of my ways of dealing with the struggle of repatriation is really taking advantage of the benefits, so I started making pumpkin recipes as soon as September rolled around this year. Let me tell you there were some recipes that I tried that were real duds, however I think these three are winners!
Pumpkin Pudding
Yum, this was a delicious pudding! I didn’t even make the whip cream and I thought it was great. I am sure it would be delicious with the whip cream as well but if you want to skip that to save time or consume less sugar the pudding can stand on its own.

Pumpkin Ice Cream
Honestly at first it sounded gross to me! When I go to ice cream stores I never get the crazy flavors I always stick to the basics. However, I was really getting into the pumpkin spirit so I thought I would give it a try and turned out uniquely delicious!

Pumpkin Oatmeal Chocolate Chip Cookies
I tried a lot of cookie recipes that didn’t taste good. To be honest I tired recipes that didn’t have two sticks of butter or a ton of sugar and they came out tasting bland. But then I tried this recipe and I had kick my partner out of the kitchen so he didn’t eat them all before dinner! I also like this recipe because the author includes how to make these cookies vegan, or gluten free. I tried the vegan recipe and they were gone in two days!
